Courtney loves Provo. She is the kind of person that would love wherever she is living, but Provo is lucky enough to be the place where she was raised, married, and has lived for most of her life. Courtney is one of those rare people who does not only just enjoy a town and take advantage of its amenities, but also is one that works actively and extensively to make a better community. Courtney supports the arts in Provo with her time, heart, and finances. Her signature accomplishment is having been one of the driving forces behind the Rooftop Concert Series, which has grown to be so popular that there are now no rooftops left in Provo that can host such a large event – an event that now occupies entire city blocks. Courtney recently started working in the mayor’s office and continues to build the community and improve the beautiful city of Provo (she has many cool things in the works).
CJane first became “famous” through her beautiful and poignant writing on her blog at cjanekendrick.com which has chronicled her struggles with infertility and then celebrated the joy of motherhood (among much, much more). However, Courtney is far from your average mommy blogger. Her writing has real depth and her style is open, vulnerable, and unafraid. Woven throughout her writing is this enduring love of Provo and the simplicity of loving the place and the moment where you are and who you are with. Her love for this is displayed through appreciating and enjoying the history and foundations of place, but also adventuring and discovering the new.
Courtney has been part of the Slab family since day one. We actually asked her not to write about Slab on her blog until we had been open awhile because we knew what would happen as soon as she did (and it happened). We have had a close relationship with her throughout our short history and are profoundly grateful for her genuine kindness and generosity towards us. Early on, Courtney had an idea for a signature pizza, she said it should have pears on it. We thought she was crazy. Four years later we started buying pears for the CJane Rocket Pear salad. The salad was so good that we started putting it on pizza as well, so Courtney deservedly ended up with two signature items on the menu.
We feel lucky to have started our business in such a remarkably open and inviting city. We enjoy being a part of this community and are grateful to beautiful people like Courtney who make Provo amazing.
Annual Slabpizza green chile roasting happens every August (harvest time in New Mexico) where we will process (meaning roast, peel, dice and freeze) almost 3,000 pounds of green chile deliciousness.
If you are interested in some temporary work which will consist in peeling and dicing green chiles during the last two weeks of August you can work as many or as few hours as you like and we will pay minimum wage plus one slab and drink on the house per 5 hour shift worked.

For many of us there is a never-ending struggle to decide which slab to order. Some find their favorite and stick with it. Some start at the top of the menu and work their way down. Some just add green chile or fire dust to everything. The beautiful thing for us is that tomorrow is a new day and we get to make the choice again.
Our new Thanksgiving Point shop only gets to choose a slab once and yesterday it chose a lovely concrete slab and finished it in one pour.
The underground plumbing is all in and framing will begin this coming week. The concrete slab is permanent though and we will all get to enjoy it for years because after a quick grind, smoothing, and sealing, it will also serve as the finished floor for the entire shop. We love the feel of simple, straight concrete and love the ability to see this slab everywhere in the shop every day.

So we are blogging about it instead. It’s true – SLABpizza numero two is now underway as the first piece of dirt was turned today which set in motion the entire process that will culminate in hot slabs of buffalo wing, thai chicken, and all the others, being served in all their tasty glory at 3430 North Ashton Blvd Suite 130, Lehi, Utah.
Over the next 100 days we plan on providing regular updates on the building progress so that everyone can know where we are in the process. Building things is fun, interesting, and quite fulfilling. We invite you along for the ride with us as we go from building inception to ultimate SLAB consumption.

Just the other day we were delivered a 3 foot by 4 foot canvas that we have hung proudly on our “intentionally devoid of content” walls of our Provo dining room. This image is cherished and used frequently. It reflects perfectly what we think about what we do. Its about people and the power that food and eating together have in bringing people together.
A little background of the photo. When we opened our tiny little place back in early 2010 we asked a good friend and phenomenal photographer Jonathan Canlas (jonathancanlasphotography.com) if he would come in and shoot some pictures of our new place. Being the remarkable guy that he is, he agreed and came for lunch with his awesome wife Callie and their young family. We made them pizza and Jonathan took some great shots of the food and the ambient surroundings.
The same day, unplanned, another friend pulled up to the shop with 4 to 5 others heralding in with the unique “pop-pop” sound of their bad boy Harley Davidsons. The beautiful bikes adorned our front entrance with their cool black leathered seats, chromed hardware, and high horse powered engines. Some of the gang from B.A.C.A. (Bikers Against Child Abuse, bacaworld.org/faqs) were showing up for lunch too. JP “Chief” Lilly is the founder of the international bikers organization (one of the largest on the planet) and he was there for a slab of Chile Verde and lunch with fellows from his gang.
Jonathan captured the essence of what we are all about in one frame, his kids and friend’s kids along with tough looking teddy bear biker guys all under the same roof, all enjoying themselves and the food.
There is a common thread among people in all cultures. The magical experience that happens when people share food together. We feel fortunate to be able to create an environment that fosters that opportunity. We love food and we love people. Our menu of over 50 different varieties of flavors of pizza reflects our nature of a deep appreciation for diversity of flavor, culture, style, ethnicity, and points of view. The world is rich with diversity and that is an essential element of its undeniable beauty.
Yes, it’s just pizza, we know, but we all know what we think about good food and sharing it with good friends.

We launched our new website this week. We tried to stay with a simple look and feel but provide some pictures and some additional new content. The “slab101” page will be a place to see small presentations to help people know how to SLAB, tell a little about us, and help generally answer questions and provide useful information. the “community” page is where we will talk about the food and the people that are so much a part of who we are.
